That is happening because the variable that you are using for the category is not being parsed in the frontend. You need to use a variable that can be parsed inside the categories.
For example, for the name of the category you need to add %term%
and not %title%
as that is only for single pages/posts.

for the categories and other taxonomies that won’t work, so the output of the metadata could be incorrect for those.
For the posts and pages, you can use %title%
as that will output correctly the title.
