No you do not need to manually insert the tags. Please navigate to the affected posts/pages and ensure that you have entered a share image along with a title and description on the social tab as shown below:

Works fine for Facebook, but unfortunately not for Pinterest. Do you have any what might be the reason? And why there is this “Some Opengraph meta tags are missing” red X after the SEO-Analysis?

Could you please test the URL on the Pinterest debugger to validate your rich pins https://developers.pinterest.com/tools/url-debugger/
OpenGraph tags are generated from the title and description and it is likely that the affected posts are missing the description. Please head over to Rank Math > Titles & meta and ensure that the global meta settings for your post, pages and custom post types are configured. These options will be used to generate the OpenGraph tags.
