To set the time for 24 hours, you would need to put 00:00-24:00 in the time slots.
For your category sitemap, I’m assuming that you have already disabled this option in Rank Math > Sitemap Settings > Category

If so, ensure that your sitemap is not getting cached. Please follow these steps for initial troubleshooting:
1. Ensure you’re using the latest version of your plugins/theme including the Rank Math plugin.
2. Flush the Sitemap cache by following this video screencast:

3. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server:

I tried flushing the cache by increasing the number, and then going to permalinks to save.
WP-Rocket has the option to preload a sitemap which is checked, and I added the URLS in the link:

But the category still shows.

Can you please check with your hosting provider if you have any other caching software on your server (such as Cloudflare) that might be still cashing the sitemap page? If yes, kindly clear the cache and try to check the sitemap page again.

Hi, my server has always had server-side caching disabled.
I’ve tried turning the sitemap feature on and off, and repeating the steps above but no luck. Do you know if this plugin is compatible with Oxygen Builder?

I moved your sitemap URL from your first post to the Sensitive Data section.
I conducted troubleshooting on your website and the category sitemap keeps on showing even when it’s excluded in the settings. I tried replicating this from my end but it works just fine.
Please clear your website cache including any server-level caching app that might be still caching your sitemap.
If the issue persists, please provide your FTP login in the Sensitive Data section as well so we can further debug the issue with our developers.

I logged into your website’s admin area and upon investigating, I found that the plugin “Self-Hosted Google Fonts” is causing the issue and forcing the category sitemap to be generated. As I disabled that plugin using the Health Check & Troubleshooting plugin and flushed the sitemaps cache, the category sitemap was removed.
Please have a look at the screencast in the sensitive data section of this ticket for a quick reference. You can get in touch with the devs of that plugin as they might already have a solution for the issue and they would be in a better position to assist you.
