I’ve read that noindexes affect the number of breadcrumbs. Putting the noindex on categories and tags doesn’t seem like a wise choice to me. What do I do? Do I enable them? I had them disabled to avoid the duplicate content problem.

If you have set your category pages as Noindex then they will not be submitted to your GSC account and the number of pages valid for breadcrumbs will drop from when they were set as Index. You don’t have to set them as Index again just to get the breadcrumbs back as the breadcrumbs are used in SERPs and since the category pages are not going to be Indexed it doesn’t matter if they are valid for breadcrumbs or not.
Also, I can check that you are using your theme’s breadcrumbs on your site and your theme is already adding a breadcrumbs Schema. Since Rank Math is also adding the breadcrumbs Schema there are duplicate breadcrumbs Schemas on your site which is not recommended. Please disable Rank Math’s Breadcrumbs from WP Dashboard > Rank Math > General Settings > Breadcrumbs. Once done, wait for Google to crawl your site again and see if the number increases.

Please navigate to WP Dashboard > Rank Math > Sitemap Settings > Tags and make sure that the Include in Sitemap option is enabled. If the issue persists then please follow the steps given below:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
