I can check that the og:image tag is being added correctly to your site. You can confirm that using this tool: https://developers.facebook.com/tools/debug/
However, there is a lot of minified CSS being added before the meta tags and it is pushing the tags down in your page source. That could be the reason LinkedIn is not able to read the tag.
Please disable CSS modification, clear the cache of your site and check again. If it works then please get in touch with the support of WP Rocket and ask them to help you move the minified CSS below the meta tags.
