The Global SEO settings in Rank Math set default templates but won’t override existing meta descriptions on products. If a product already has a meta description (even if it’s empty), the global template won’t apply.
To fix this:
Remove custom meta descriptions using bulk edit (via WP Sheet Editor or similar).
Recalculate SEO scores from Rank Math > Status & Tools > Database Tools.
Ensure no other SEO plugins are conflicting.
For full automation, the PRO version may be helpful.

I have used this feature, again with the free plugin, on other sites without any problems.
However, it does not work here.
This is a test site, and I have also tried disabling the other plugins and the theme, but the result has not changed.
There is no cache, not even at the hosting level.

This is the order we follow to generate meta descriptions for WooCommerce products or product categories, for that matter:
1. SEO description (Rank Math meta box while editing)
2. Product Short description
3. Single product description (Titles & Meta settings)
4. Product description (long description)

Please share the FTP for the staging site so we can check.
Alternatively, you can apply the filter via the Code Snippets plugin and check again.
Please note that the meta description will not show on your WordPress editor/dashboard as the filter runs on the frontend.
