Please follow the below steps and see if that fixes the issue:
1. Flush the Sitemap cache by following this video screencast:
https://i.rankmath.com/pipRDp2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/3. Clear your website’s cache and remove all the sitemaps from your Google Search Console account, and then submit only the main sitemap:
/sitemap_index.xml
.Further, give Google some time to crawl your website again and see if the issue gets fixed.

I checked the sitemap, it is returning 500 status.
You should not submit the sitemap to Google as it is not working right now.
5xx errors are usually caused due to server misconfiguration or other server issues.
Please check if PHP values are not too low to handle the processes.
You can check that by going to WordPress dashboard > Tools > Site Health > Info tab > Server
If the values are low, please contact your web host and ask them to set the following values:
PHP Memory Limit: 512M Max input time: 150 PHP time limit: 120 PHP max input variables: 1000
If the issue persists after setting the above values, you can ask your web host why the sitemap is returning 500 error.
