If the sitemap is working fine, you can try validating it on this link: https://www.xml-sitemaps.com/validate-xml-sitemap.html
If the validation works, please move to the second point.
2. Make sure you have cleared the cache and excluded your sitemap URLs from being cached.
Once done, resave your permalink and sitemap settings, then resubmit your main sitemap (sitemap_index.xml) on GSC.
If the issue persists, please share with us your sitemap URL in the sensitive section so we can test from our end.

Thank you for the follow up.
It seems your sitemap is likely being cached. If you have any caching plugin, please exclude your sitemap URLs from caching and purge your site cache then do the following:
1. Head over to WordPress Dashboard > Settings > Permalinks
Hit the save button once.
2. Go to WordPress Dashboard > Rank Math > Sitemap Settings and change links per sitemap to a different value such as 201/501/1001/2001. This will force the sitemap to update. Hit the save button once.
That should fix the issue.
You can test your sitemap in a private browser to avoid browser caching. If it shows up fine, resubmit your main sitemap on Google and give it sometime to crawl.
If the issue persists, let us know so we can investigate this further.

I checked your site here: https://www.xml-sitemaps.com/validate-xml-sitemap.html and it seems to be valid now with no issues.
Please resubmit your main sitemap on GSC, only the sitemap_index.xml, and if the persists you can try and use a 3rd party sitemap plugin to confirm. Just make sure you have disabled the Sitemap module of Rank Math in WordPress Dashboard > Rank Math > Dashboard
when using a 3rd party sitemap plugin.
If the other plugin works, please do let us know.
