Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

Thus far, I’m guessing that the only way for me to test this is to submit the site to Google’s check and if it views the site like a user would it wouldn’t pick up the changes?

It seems like the FAQ Block is wrapped inside a container/group of any similar element. Here’s a screenshot for a quick reference: https://i.rankmath.com/Zndkh7
When this happens, we’re unable to detect the FAQ Block to parse its data into Schema markup and thus you do not see the FAQ Schema when testing with Google’s Rich Results testing tool.
Please remove any such elements wrapping the FAQ Block and test the page again with the Rich Results tool and see if that helps.
As for your question, when performing the troubleshooting test, after enabling/disabling any plugin, you can search for FAQPage in the source code of the post on the front end.
