In PRO, we have an option to select only one Global Identifier, if you want to use both GTIN and MPN together you can use the schema templates.

But i think it won’t give the option to add extra gtin/mpn attribute?
And does it work like we simply override product schema?

No as for the option to add the GTIN or the MPN it does not have the functionality to add extra GTINs attributes for this unless your product here is variable.
You can only define a single Global Identifier key to use but there are several variants of this. This will also work within the product schema as well. This is only for the WooCmmerce product schema.
If it is a product schema you can use extra attributes for both the GTIN and MPN by duplicating the fields.
