I moved you ticket here, your issue sounds exactly opposite of the issue in the thread you posted your reply where the categories need to be removed from sitemap.
Assuming you are using the latest version of Rank math, there are a few things you must check to ensure your category sitemap is generated without issues:
1. Make sure you have set your categories to index in WP > Posts > Categories > Your category
2. Ensure that the noindex is not selected for categories robots meta in Rank math > Titles & Meta > Categories
3. Check the sitemap settings and check if the categories are setup to be included in the sitemaps including empty terms if your categories don’t have posts assigned to them.
