We recommend keeping Schema disabled on product archives like the one you referenced. This is so you can avoid issues exactly like the one you are facing where product Schema cannot be used on archives.
You can do that from WordPress Dashboard > Rank Math > Titles & Meta > Product Categories > Remove Schema.

I have checked and the warnings are caused by the products and not the category. But those are just warnings about some recommended fields that you might or might not use (for example, it also warns you about the field “priceValidUntil”, a field which you don’t need unless you are running some offer), so you shouldn’t worry about them, only if they were errors.
