Please try excluding the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Then clear the website cache.
Remove all the sitemaps from the search console and add sitemap_index.xml and wait for Google to crawl the sitemap.

I am using WP-Optimizer and Autoptimize which I use on my other site. I’ve added the sitemap URL in the Caching exclusions.
However, I am a little confused regarding your instruction “Remove all the sitemaps from the search console and add sitemap_index.xml and wait for Google to crawl the sitemap.”
Do you mean to just remove the old sitemap URL and re-add it and wait for Google to crawl it?

I’ve checked the category sitemap, and it’s showing fine.
Could you please try submitting the category sitemap individually and see if that makes a difference? /category-sitemap.xml
You can as well confirm if the issue is really with the Rank Math sitemap by using a 3rd party sitemap plugin. Just make sure you have disabled the Sitemap module of Rank Math in WordPress Dashboard > Rank Math > Dashboard when using a 3rd party sitemap plugin.

Yes it’s working now. About an hour ago I discovered that in the edit my category page itself in the Rankmath advanced section, the categories were somehow selected as nofollow although enabled in the main plugin settings. Google recrawled already and it’s working now. 🙂
