If in case it is a custom post type, please see if that post type supports the editor block (Gutenberg/Classic editor).

If you are not using a plugin/theme to create a custom post type then the Pages should be the default page post type of WordPress.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.

I’m facing the issue withing a page and not a custom post type. FYI we are using ACF PRO, not gutenberf/classic editor.
We are using ACF PRO on the post type , and we don’t encounter the problem

As you do not have the editor on the pages, Rank Math is unable to output the preview of the meta description when the page is published/updated after modifying the meta description.
The meta description is saved and rendered on the front end. It’s just that the preview is not shown. Please try adding the editor and see if the preview displays properly.

Adding editor support means you can install an editor like Classic Editor by going to WordPress Dashboard > Plugins > Add New.
Ensure that the noindex is not selected for Global or Posts / Pages Robots Meta by going Rank Math > Titles & Meta > Global and Posts / Pages tab as well:

We can’t use Classic editor because we use ACF PRO.
After ensuring that the noindex is not selected for Global or Posts / Pages Robots Meta and testing again, it does not work.
It’s very strange because it works with posts but not pages.
