You can change it by going to the post > SEO settings > Edit Snippet > Description.

It was working fine from this perspective when I was using Yoast before switching over to Rank Math.
Yes, I am doing all that and have been redoing it as suggested. For some reason, it reverts back to ‘%excerpt% in the snippets part inspite of me updating a meta description and clicking on Update later on the page. The updated text, whatever it may be, simply disappears.

Please check your browser console for script errors when you save your pages/posts.
If you see an error containing “updateMeta”, then your server must be blocking Rank Math’s API. Please refer to this guide to fix it: https://rankmath.com/kb/meta-data-not-saving/#firewall

From the screenshots you have sent, it seems that your web host is blocking the Rank Math routes. Please get in touch with them and whitelist those routes you have shared.
Once done, clear your website’s cache and check again.
