Please note that crawling and indexing depend on the crawl budget of your website. You need to wait for Google to crawl the website.
You can request indexing for the URLs using the URL inspection tool in the Search Console.

I have done this as well, successfully. The previously submitted sitemaps were not able to be fetched.

It looks like the sitemap is getting cached. I checked it, it is returning a blank page.
Please follow this guide to exclude the sitemaps from caching and then re-submit the sitemap:

You should wait for Google to recrawl the sitemap and website.
