same problem here.
I am not able to set a primary category for my posts. This is mandatory, because I am using multiple categories (parent and child) for my posts.
Using WordPress 5.5.3 and RankMath 1.0.53.1.
I found some tickets created one year ago with the same issue. That solution was to use the classic editor. But this is not a suitable solution…

Thank you for contacting Rank Math and sorry for any inconvenience that might have been caused due to that.
Installing the classic editor is still the current work around for this issue.
You can optionally leave Rank math integration with Gutenberg. I’ll however check with the dev team if there is any progress/update on this.

We are sorry but since they both work differently, you have to use the Block Editor version of Rank Math to make changes to the Primary Category.
