You can empty the cache by going to WordPress Dashboard > Rank Math plugin Dashboard > Settings > Search Console. After that, you can disable the Search Console module and the data won’t be generated again.

The Search Console module in Rank Math is not for adding the sitemap to Google Search Console, it is to see in WordPress important Search Console data, like keyword analytics.
If you disable that module in Rank Math, it won’t affect your sitemaps. Anyway, remember you have to add the sitemaps in the Google Search Console website.
