I tried to replicate your issue (edit the homepage using Elementor with Rank Math enabled but I had no luck reproducing the issue. I have attached the screencast in the Sensitive Data section.

Still the issue, do not know much, could it be on mi side?
Also, when I activate Elementor on safe mode I don’t see the RankMath options to manage the page’s SEO.

The issue seems to be there even with Rank math deactivated, please check the screencast in the sensitive section. I have also noted you are not using the latest version elementor, please update to check if this fixes the issue, if it doesn’t please get in touch with Elementor support.
