You can disable the Auto Update by going to the WordPress Dashboard > Rank Math Dashboard > Status & Tools and at the bottom you will find a switch to disable the Auto Update option.

I am afraid that I cannot replicate these issue on my end and thus there there could be a conflict or some custom code that is causing this on your end.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Please let us know if you find the culprit.
Only the site admin would know and your users won’t be affected by this troubleshooting.
To fix the issue temporarily, you can rollback to the previous version and also disable automatic updates by heading over to Rank Math > Status & Tools > Version Control > Auto update and disable as shown below:

I tried it with the healthcheck plugin. I don’t see any issue here. It seems like there is some issue with the plugin only.

Right now, i have Version 1.0.41.2 version installed, where i don’t have any issue. If you want to see the issue, Please update it to the latest version, edit any publish blog, you will not see the meta heading, descriptions, and SEO parameter list.
Focus keywords are available but in a strange way.Not, how it generally looks with rankmath.

My investigation shows that your theme is not playing nicely with the updated plugin files and this has been submitted to our dev team for closer investigation. The metabox works as expected when running one of the stock WP themes as shown below:

The issue has been fixed, i believe. There was some issues with my child theme. However, i am still testing.
