Could you please confirm if you’re referring to the last modified date in Rank Math sitemaps?
If so, the last modified date for the sub-sitemaps shows the date when the sitemap was last updated. If you make modifications to an existing post then the last modification date for the post URL will be updated but not for the sitemap URL. The sitemap’s date will only update when a new post is added or removed.
In case you wanted to modify the last modified date, you may need to remove the post/page from the sitemap and insert the post manually by using this filter:
