You need to follow the setup process but skip the part where you create another API key from Google and just use the one you have already used for the other website.
Regarding the submission to the Indexing API, that happens automatically for the post types you have added to the settings under WordPress Dashboard > Rank Math > Instant Indexing.

—-Does this mean I have to create a new API project and a service account with a different email address each time? But I can use the same JSON API key for all my new sites, is that correct?

You can use the same project, service account, and API keys across multiple sites.
However, you may need to ensure to set the service account as the Owner of all the sites in the Search Console.

It is completely fine if you have created different projects for each site. And it is completely up to Google how long they take to index your site. The plugin makes sure to submit the URL instantly to the indexing API but it is still Google’s decision if they want to crawl or index the URL or not.
