Also, we are not using WooCommerce. We’re using Easy Digital Downloads (EDD), and on our individual product pages, we already have the EDD Product schema implemented.
My main concern is with category pages (which list multiple digital products). You mentioned using the “ItemList” schema type for those pages, but I’m unable to find “ItemList” in the schema generator inside Rank Math. Could you please guide me on how to set “ItemList” schema for category/archive pages manually or via a filter/hook if it’s not available in the default UI?

Those schemas you mentioned are already added to your site automatically if you’re using Rank Math.
So for your EDD products, you can use the Product schema, and all the data from your products is automatically added to the schema:

Regarding the itemList schema, it is only available with Rank Math PRO:

Another thing is that currently, the default schema type selected under Title & Meta > Posts is Article (as shown here: https://prnt.sc/EaC3MZQFNJar). Since we are running a digital product store and selling templates, what would be the most appropriate schema type to select here?

If you’re using Rank Math PRO, the ItemList Schema is automatically applied to a category, product, and tag archives.
Also, for your normal post types, you should use the Article schema as the default and recommended.
