Hello,
I can check that your categories are set as noindex and that’s why they are not being included in the sitemap. Please navigate to WP Dashboard > Rank Math > Titles & Meta > Categories and enable the Category Archive Robots Meta option and set it as Index.
Once done, the category sitemap should be included in the main sitemap. After confirming that, please remove all previously submitted sitemaps from your GSC account and resubmit your main sitemap.
The post sitemap is already in the main sitemap and has all the latest posts. The issue should be resolved once Google recrawls the site and index the changes.
