Yes, this is possible, but available only in Rank Math PRO which you can purchase from here.
After upgrading, navigate to Rank Math > Status & Tools > Import & Export > CSV File > Export CSV. Export the CSV for your posts, edit the meta details, and import it back. The meta description is under the seo_description header on the CSV file. Posts, pages, and products are classified as post under the CSV object_type header.
Remember, you can set a default global SEO Description for all your products via Rank Math > Title & Meta > Products. You can also use variables, i.e. using “%title% %sep% %wc_shortdesc%” as your SEO Desction will display “[Your Title][Your Separator Character][Product Short Description]” as your SEO Description. If you leave the seo_description field on the CSV file empty, it will also automatically use the global SEO Description that you have set in Rank Math > Title & Meta > Products.

– the one which will have already a metadescription wont be impacted ?
– the one which wont have Product Short Description wont have any metadescription ?

The products that already have their meta description set individually won’t be affected.
Also, if you use the %wc_shortdesc% variable in the description, it will return empty if the product short description does not have any content.
