Why are some posts on my site not displaying images on google?
I would like to know if there is a minimum dimension recommended by google as well as image size to appear in the SERPs

There are no dimensions or quality metrics that you must abid to when trying to index the images of your website, but Google has said countless times that to have a chance of getting the images indexed they should have good quality and include metadata such as ALt tags and TITLE tags which help the Search Engines better understand them.
So, our recommendation is that you check carefully the images that are being outputted on your website and also make a search on Google Images with the following operator to find images already indexed:

The actual images can’t be marked as “index” to instruct search engines to index them on the SERP. The page to which the images are added in the content must be optimized so Google will recognize it and proceed to index it on the SERP.

I did the test on domains and realized that google is indexing images that have a .jpg extension
The other site all the images are in .webp format, I believe that is the reason why the images are not appearing in the SERPs.
I will make changes to the featured images and wait.

I am having a conceptual question about rankmath configuration.
There is an option to remove the image from the sitemap and there is in the settings for and titles of metadata the option not to index images.
I wonder if both settings represent the same thing?
I believe that my problem is in the rankmath configuration.
I just want the featured image to be indexed in serps so when a person searches for the keyword my post will appear with the same image as my competitors.

The No Image Index option is different from the Images in sitemap option.
The Images in sitemap option only allows you to add or remove the images from the sitemap.
The No Image Index option informs the search engines that you do not want any images on the page to be indexed.
The images on Google SERPs are not controlled via the Schema markup or any plugin, but rather they are taken directly from your page when Google thinks itβs beneficial for the user to show those and it mostly depends on the keyword search term and the website authority.
You can try to add relevant ALT text to the images that you want to appear in the search results.

I understood perfectly, my mistake was putting the global meta tag “no index” for all the images. Therefore, my images would never be indexed by google.
Now I will change the meta tag and improve the alt attribute to see if google will display my images in the featured serp
