Hello,
On mobile SERPs, the image that appears is usually the first suitable image that Google can find on the page.
So please make sure that you include a good image as the first one on your pages.
Having said that, it’s entirely up to Google if it decides to show the images or not on SERPs as that process is automated by the Google algorithm.
