Since you don’t want to display your categories in your search results, you should mark them as no-index and remove them from the sitemap.
To display the posts, they have to be set as index and also added to the sitemap (both options are usually enabled by default when you install Rank Math).

If I do this setting as you show in the screencast after that my site’s post would show like without category and only with my permalink.

No, I think we misunderstood each other. What I told you was about how to remove categories from the Google Search results.
But what you are looking for is to remove the category from the top of the search result.
To do that you should remove the breadcrumbs on that post, since Google is using them to generate that structure.
Keep in mind it is not always recommended to remove the breadcrumbs since it helps Google (and other search engines) to crawl easily your website.

Let’s use for example one of the results you showed in your video, this one: https://backlinko.com/seo-stats
If you check it with Google Structured Data Testing Tool, you will see they are not using breadcrumbs on that specific page: https://search.google.com/structured-data/testing-tool#url=https%3A%2F%2Fbacklinko.com%2Fseo-stats
So Google is displaying in the results just the URL of the page instead of the breadcrumbs structure, since it can’t find it.
