That doesn’t come from any specific setting but rather Google is picking up the images directly from the page and displaying them on SERPs because it’s reading the results as being a list of items.
Usually, this can happen for aggregator pages that include multiple items with images.

It depends on a lot of factors, it could be Google’s change of algorithm or changing the theme is a possible reason too.
With that said, we can never know the reason as having images on the SERP depends entirely on Google.
What you can do at the moment is to further optimize your images by adding relative alt tags with the desired keyword.
