Please also make sure that the categories’ robots meta are already set in Rank Math > Titles & Meta > Categories:

Note that this option is setting the default robots meta. If your categories were set to noindex before, you may need to edit them individually and select the index option inside.

Can you please check if you have set the individual category to noindex?
If you have, the individual settings will overwrite the global settings.
Please go to the category > SEO Settings > Advanced Tab > Check index checkbox > Save.

Then, clear website cache and try inspecting the URL.

I had all those options checked as “index”. Nevertheless, it’s done now, I changed my WEBSITE theme, and it worked. I guess there was interference with the current theme I was using.
