I have been searching for the answer to this as well. I have no SEO section when editing the Shop page using Theme Builder like I have with standard pages, even though I have turned on SEO boxes wherever possible.
Of course I cannot directly edit the Shop page itself, only the template, and I see no traces of any SEO configuration on it anyway. Am I crazy or did there used to be a way to do this very easily? I feel like I had no problems doing this in the past, but maybe I’m confused.
Okay so I have to say I feel pretty stupid. In my case, I had to click on the three dots in the upper-right corner of the Shop page Edit window and check Rank Math under Plugins. Once I did that, everything showed back up.

@Radu, the menu archive doesn’t appear to be an actual page or post type which is why Rank math is not adding the SEO options. If you go to the page you will see you can’t even edit or even view the page from a normal WordPress editor.
It seems to be a template provided by your theme and you will therefore need to get in touch with your theme provide to guide you how to customize this.
