How i can Remove some pages from sitemap?

Some options are only available when you enable the Advanced Mode in Rank Math.

It seems like you have chosen to use the Easy Mode. Please follow the steps in this link to switch to Advanced Mode and see if the exclude posts from sitemap option appears in your WordPress admin area > Rank Math > Sitemap Settings > General: https://rankmath.com/kb/advanced-mode/
