If those posts from the category were previously indexed on Google you don’t need to do anything as the permanent removal is done by pages returning a 404 error as you can see from the Google documentation here: https://support.google.com/webmasters/answer/9689846?hl=en
That removal section you shared in the screenshot should only be used for temporary removals and since the pages were deleted those are actual permanent removals.

Yes, you may just need to give Google some time to deindex them.
Please note that it may take some time for Google and search engines to deindex URLs if they are already showing on the search results pages.
According to Google guidelines, crawling can take anywhere from a few days to a few weeks. The crawling and deindexing of the website depend on the authority and crawl budget of the website.
