No the two plugins should be able to play nicely but you will need to disable the Sitemap module in the Rank Math plugin by heading over to Rank Math > Dashboard.

Why can’t I use both sitemaps???

You can use both but you have to make sure you use one for your regular posts & pages (Rank Math) and use the other only for News content (news XML sitemap one).
If you have two sitemaps containing the same information, that will cause unexpected results.

We use Rankmath in our site http://www.hiper.fm and we are now listed in Google News.
We need to create a sitemap like this one:

Do you know a plugin to do it?
If we use the example you gave above, and if we continue using Rankmath, how can we exclude from Rankmath sitemap the categories that we send to the news sitemap?

Thanks for the question.
You can make use of the free news sitemap plugin that Todd shared earlier and then exclude the post categories from Rank Math by heading over to Rank Math > Sitemap Settings > Categories and toggle the option to include the categories in the sitemap as shown below:
