However, please note that nowadays, Google does that very commonly. Even when everything is fine, Google may choose to display a different meta title for your search query result. Google may skip the custom metadata you have set and instead display something from the page’s content that better matches the search intent.

The images on Google SERPs are not controlled via the Schema markup or any plugin, it mostly depends on the keyword search term and the website authority.

The issue here is not related to the SEO title and description of the post. Google is ranking your homepage instead of the actual post for the post title. The post and the keyword you are searching for are present on the homepage, and Google finds that snippet more helpful to show in the SERPs than the actual post.
You will have to work on improving the content and overall SEO of your site to improve the rankings of posts in the SERPs.

It is up to Google if they find the post more relevant to rank higher or if they use the homepage. It depends on the keyword you are using and usually happens with the new posts on the sites that use the latest posts as the homepage. Since the title and description of the post available on the homepage satisfy the search term, Google can use them and show the homepage in the SERPs.
You should focus on improving the content of the main post for the search term you are targeting and wait for Google to rank it higher than the homepage.
