Tried resetting the permalink settings as suggested but to no affect

Please note that WordPress itself doesn’t fully support the Greek letters in the URL. You can try to change the URL from the block editor URL settings and see if that works for you.

As you can see the URL I set is 70/75 characters but when I save the post, it gets cropped.

Please note that Rank Math can only change the URL if WordPress supports that. We checked the URL on our end and we can see the same issue even with block editor permalink settings. The ζώδια-τσάκρα slug is automatically getting removed after saving the post.
In this case, we suggest you try using the Permalink Manager plugin and see if that works for you.
