Please exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

After that, remove all your sitemap/s from Google Search Console and submit only the primary sitemap (sitemap_index.xml).
Once done, clear your website and server’s cache (if any) and wait for Google to crawl the website again and see if that helps.

If the sitemap is already excluded from being cached by your caching plugin/service, then it’s up to Google to recognize the changes in your sitemap.
Discovered URLs 0 that you see in Google Search Console just means that the URLs in the sitemap were already found by Googlebot by other means, instead of via the sitemap. For example, Googlebot may have found the URLs from internal links or possibly from links on another site.
Crawling and indexing of the website depends on the authority and crawl budget of the website.
It is completely upto Google if they want to index or not index your website. So, if you haven’t willingly or accidentally made your post noindex and Google still isn’t indexing your post – it means that either Google doesn’t want to index or hasn’t crawled your post yet because it hasn’t allocated that much crawl budget to your website.
With all that said, please check for URLs in your Google Search Console and look for any coverage issues so we can identify why Google refuses to index your posts.

Unfortunately, it cannot be enforced on Google how it crawls the website. If Google is crawling the sitemaps when the solution of manually adding them is followed, though it is not an easy approach when you have a huge number of sitemaps, you may follow that approach after increasing the Links Per Sitemap to around 500.
However, please note that URLs not discovered from the sitemaps is not an issue. As long as the website is getting crawled and indexed, there’s nothing to be worried about.
On a different note, upon testing the variations of your sitemaps with https://httpstatus.io/, I found that two variations are returning 200 status:

Except for the preferred variation (which should return only a 200 status), all the non-preferred variations of the website should redirect to the preferred variation and return a 301 and 200 status.

You can also get in touch with your web host regarding this.
