Can you please share the affected product page URL with us so that we can check this further for you? However, if you’re referring to the stock and price in Google, it comes from the Product schema.
You can change the price and stock on your actual product and Rank Math will automatically update the schema.
Once done, please allow Google some time to recrawl your product page and update the information on SERPs.

That particular product is set to be out of stock because of the option you have on it:
As for the pricing, that comes from the variations on your website. The plugin looks at the lowest offer and the highest offer and adds the data into the Schema markup as an aggregate offer since the only variation is the pricing.
To change the values for pricing you need to open the variations and update their pricing to the values you would like.
