I checked the sitemap with XML Sitemap Validator, the sitemap is validated without any issues. Check the screenshot in the sensitive data section.
Please follow these steps to fix the issue.
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Once done, clear the website cache, remove the sitemap from the Search Console and add sitemap_index.xml
again.
The couldn’t fetch error, is in most cases simply due to a bug in the Search Console.

I hope you’re doing great. I want to know why my website post doesn’t auto-update in the search console sitemap? even categories are being updated. I was posted an article on 22/10/2021, it was not updated in the search console sitemap, when I got support then that post was updated. But I have another post but it’s still not updated in the search console sitemap, can you please let me know where is the problem?

Can you please flush your sitemap cache once again by changing the “Links Per Sitemap” value?
If that updates the sitemap again, then it could be that your sitemap is still heavily cached, please ensure that your sitemap is not cached by your plugins or any caching software from your server: https://rankmath.com/kb/exclude-sitemaps-from-caching/
Do note that it takes Google some time to recrawl your sitemap and update the URL count on your GSC.
