I know the difference but that page doesn’t explain why the sitemaps overview is not available as a domain property.

This is a limitation in the API we are using currently. Unfortunately, there isn’t much we can do to fix this at the moment.
As a workaround, you can verify that website using the traditional method as well and choose that when using Rank Math.

Thanks for the reply – I tried verifying with the method Rankmath suggests, with the html code, but it doesn’t seem to work, the website doesn’t show up on the dropdown menu. Only after verifying through Search Console with the DNS method did my website show up on Rankmath’s dropdown list in the Search Console section.
Would you know if there’s a way to solve this? I can verify it all just fine through Google, and it says the site’s been verified, it just doesn’t show up on Rankmath as a dropdown option after doing this.

You have to deauthorize GSC and re-authorize so the new list of your properties is shown.

I have tried that many times but it doesn’t work. All it shows is the Domain one.
We might need to take a closer look at the settings. Please include your WP logins in the designated Sensitive Data section.
It is completely secure and only our support staff has access to that section. If you want, you can use the below plugin to generate a temporary login URL to your website and share that with us instead:

I’ve had more of a look into it and it seems domain verification is the best way to do it now which is what I’ve done…looking at another help topic Rankmath says Google doesn’t have an API or something for sitemaps yet so this has been resolved.
