Please head over to Rank Math > Dashboard and disable the Sitemap module and install the following plugin for the same functionality: https://wordpress.org/plugins/google-sitemap-generator/
Next, submit this sitemap to your search console and let us know if the problem is still reproduced.

Since we have been able to establish that this problem is not stemming from Rank Math, I can suggest that you switch back to the use of the Rank Math sitemap and wait for this problem to resolve itself.
This happens from time to time and the error should resolve itself in a couple of days.

No this is not a Rank Math issue, the search console is sometimes unable to process the number of requests on the queue which causes this error.
Please give this a few days and check if the issue will be resolved.
