Rank Math updates the metadata in 2 different ways depending on the editor which you are using. In Block Editor, Rank Math updates the metadata using the rest_route. Following is the file path where the rest function is declared: https://github.com/rankmath/seo-by-rank-math/blob/master/includes/rest/class-admin.php#L200
And in Classic Editor, Rank Math uses CMB2 package. So if you want to change any data on update then you can use cmb2_save_field or cmb2_process_fields filter: https://cmb2.io/api//source-class-CMB2_Field.html#593

We are so so sorry but we have no option of automating this.
You have to put in the focus keyword manually. You can test the code suggested here:https://support.rankmath.com/ticket/autofill-term-name-product-category-as-focus-keywords/?view=all and see if you can tweak it to work for you.
