Please note that it is indeed possible to add more than a single keyword in your post.
You can add unlimited focus keywords to your posts using Rank Math easily. In case you are not able to do so, please make sure that you are using the latest version of the plugins. If not kindly update them you can check the changelog here:https://rankmath.com/changelog/
Please see an example of 20 keywords I have inserted here: https://i.rankmath.com/KKeE9Z.
It is not also dependant on the language you use as it should accept all words you insert.
Some of the tests are unique to the Primary Keywords (the first one) and some tests run on all other keywords.
You can add unlimited focus keywords and Rank Math will consider them all while running tests based on the one you select.
If this still persists, it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.

thank you for the fast replay.
Well, I had already the latest version…
However I did reinstall it again.
Problem is still the same (?!?!)
After a few letters, the system doesn’t accept the further letters…
(in your screenshot where only non-German terms)
So I just tried a few other German terms.
Some work fine, others show the same. (not possible to complete the word)
I can’t fulfil the word, just by ongoing typing…
On the other side, the word itself via copy & paste works..
I have a small page, so thats fine, on the other hand its still very strange…

Would you mind sharing a list of the German keyword you say are not getting inserted in the focus keyword sections?
