Since the Flesch test does not depend on the language (mostly) so writing in Italian shouldn’t hamper the score.

It does depend on language. For Spanish the Flesch-Fernández Huerta formula is used:
206.84 – (0.60 x P) – (1.02 x F)
Where P is the number of syllables per 100 words and F the number of sentences per 100 words. If a text reaches a score between 90-100 it means that it is very easy to understand (suitable for 4th graders) and between 0-30 very difficult (typical of a university level).
I have tested this using this tool https://legible.es/ and Yoast SEO.
Most of my posts are 80+ with Yoast and the tool linked above. Rankmath brings that score down to 20 / 30.
Also, the Flesch-Kincaid formula is available for German, Spanish, Italian and others:

Hi guys, hi Michael. It would be great to have the Flesch Test working in other languages than English. I need it for some Italian websites. (Yast do it pretty well ;-))
