Please note that Rank Math has no control over how the favicon will appear on the SERP. The images on Google SERPs are not controlled via the Schema markup or any plugin, it mostly depends on the keyword search term and the website authority.
You can check these Google guidelines on how to ensure that your favicon is set up to show on the search results page.

Ok, so why is there a spot in the Rank Math setup to upload an image for Google that it states is for Google? Why does that image not save to what we save it as? It shows our site logo in there every time, and will not save what we have for a favicon on our site. This was not a problem until we installed the plugin.

The field in the Local SEO settings is to add your Logo to the Schema. That field is not for favicon. The favicon has a very small size and that could be the reason you are not able to save it. It is also not recommended to add the favicon there, you should use your site’s original logo.
For favicon, you will have to follow the guidelines shared by my colleague and wait for Google to decide to show it in the SERPs.

Ok. Again, I never had this issue before until we installed this plugin. However, I have removed, re-saved, and requested a crawl. So hopefully it fixes it over the next week or two. Thanks-
