I am sorry but I don’t think you will be able to add FAQ Blocks to your categories using Rank Math (for now, maybe in the future you will). Right now our only way to add the FAQ Schema is with block editor which is not an option in categories.
You can check if there is a third party plugin that can help you achieve this.
Please note that category pages usually take their schema from the added posts so you can create the schema on included post(s) and it will be automatically added to the category(s) related.
