For your first website, please try rebuilding the index, then manually deleting old imported data, and start the fresh data fetch. This should allow you to retrieve fresh data from your GSC and GA. Please follow these steps:
1. Head over to WP Dashboard >> Rank Math >> Tools & Status and click the ‘Rebuild Index’ button 
2. Head over to WP Dashboard >> Rank Math >> General Settings >> Analytics tab, and click the ‘Delete Data’ button and then click the ‘Update Data Manually’ 
3. It will start the new data fetch from Google. You can reload the page to see the notice related to the import process.
4. Once the process is complete. Please recheck the Analytics page.
As for the second website, it seems to be returning a 403 error as you can see in my screenshot:

Kindly check this one with your hosting provider.

Is the server host blocking Rankmath or why are we seeing a 403 forbidden?
This website’s hosting is being outsourced to the client’s IT company so I would need to give them more details.

It seems that the 403 error is specific to the tool used to test the URL because if we load the page directly it’s loading fine and even Googlebot is able to access it, returning a 200 status code.
Having said that, the 501 errors are usually server implementation issues where the configuration does not allow for that kind of request to be processed so you would need to get in touch with the team responsible for hosting the website.
Regarding the critical error, you can enable debugging on that website and see the details of the fatal error to see what function is failing.
You can also share that error log message with us and we can advise what can be done to get around the issue.
