Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Then clear your website and browser cache and check the sitemap.
That should fix the issue. Please let me know if that does not. We are here to assist.

It looks like a conflict with one of the plugins or the theme you are using.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet).
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.
If the issue persists, please record a video screencast using a tool like Loom showing the troubleshooting and edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.

When I previously flushed the sitemaps cache, they loaded properly, but now I’m able to replicate the issue again.
Upon testing with httpstatus.io, I found that your sitemaps are getting heavily cached by “Engintron” server cache.

Please get in touch with your web host and ensure to exclude the sitemap files from all caching services and that should fix the issue.
