It seems that you are looking at the scores directly to the regular editor. If you have created your content using elementor, I would suggest you refer to the scores under the SEO tab in elementor editor, not in classic or Gutenberg editor.
Do note that sometimes the score may differ when you compare it to the score shown on the regular editor from the Elemenotr editor as some of the shortcodes and blocks/elements can’t be read over the regular editor so I suggest you should only focus on Elementor’s SEO scoring if you already built your content there.

The concept is clear to me, the only problem is that actually only some pages were created directly with the elementor editor, others were created with the theme builder, and then told elementor where to show that created template.
In this case I saw that there is the possibility to add a filter to the function.php to go to work there but my concern is that it refers to the indexing of the template and not of the final page where the template will be applied.
Having said that, beyond the score point that Rank offers me in the tab on gutemberg (due to the fact that it does not read shortcodes or elements) is the seo work done on page still taken into consideration when it is sent to google? Or the fact that Rank does not read it, subsequently hides it or does not show it correctly to the search engine?

The content added in the theme builder will not be considered in your page’s content analysis as it is not actually part of your page content in the backend.
With that said, when failing SEO tests within Rank Math, this will not affect your overall SEO ranking on search engines as the SEO score generated by Content Analysis is only for your reference. The Content Analysis all happens in the backend and search engines should still be able to read your content.
