Assuming you are using the latest version of all the plugins and the themes, it seems like a conflict with one of the plugins or the theme you are using.

Thank you for such a quick response. You guys have a great support staff. Embarrassingly, I gave you the wrong TLD for my own domain :/ I fixed it above just in case. I did go into troubleshooting mode and disabled all my plugins, then turned on the following:
Elementor, Elementor Pro, Rank Math SEO, Rank Math Schema Markup Rich Snippets, Rank Math SEO for WooCommerce, and of course WooCommerce itself.
Unfortunately I still noticed the same thing when editing a product in Elementor, going up to “SEO,” clicking on the shopping cart/Schema section, choosing “Product” schema type, entering the appropriate information, and updating the page. Upon re-entry with Elementor, the updates aren’t there.
Any other ideas? Thanks again for your help!

Since you already have Rank Math Suite installed, you don’t need to have Rank Math Schema Markup Rich Snippets, Rank Math SEO for WooCommerce installed on your site.
Please disable these add ons to fix this.

I went ahead and disabled both the Rank Match Schema Markup Rich Snippets and the Rank Math SEO for WooCommerce plugins. What you said makes a lot of sense as I could definitely see potential conflicts there. Unfortunately I am still running into the same issue in that, when I enter the schema and save it inside the Elementor editor, it is not there after exiting and coming back in.
Maybe (or not) worth noting is that I have tried it with and without updating the product page in the native WordPress editor between checking inside Elementor. My thought was that maybe the WordPress editor and Elementor were overwriting each other every time the page was updated and effectively erasing the other. Now that doesn’t look that way.

The saving of the schema data works as expected for me when testing on the backend editor and Elementor.
Please take a look at the example link on the sensitive data section.
It would also help if you could test this from a different browser.

I think I got it to work on my end as well. Changes seemed to stick immediately once I tried Firefox, Opera, and even Tor. I appreciate you going in and testing and letting me know what you found. I am going to go ahead and mark this resolved with the ultimate problem turning out to likely be a caching issue on my end.
